These guys are fast fermented then hot smoked and cooked so they are ready to eat. Flavoured with Wildbrumby gin botanicals including of Juniper Berry (of course), native pepper berry, coriander, cardamon and citrus they are a full flavoured sausage.

These snags are our take on the traditional European sausage that hunters carried with them to sustain themselves during the hunt. Rumour has it that these hunts were popular with men around Christmas as it allowed them to get away from the cleaning and preparations at home.
